Granita (French granité , Italian granita siciliana ) is a refreshing, sorbet-like traditional Sicilian dessert made of fruit, ice and water. Pierre Guillaume's creation Helioflora seems to replicate the structure of this Sicilian dish. A sorbet of rhubarb, apricot and basil gives a special shade to the boodle and the warm aroma of red sandalwood.
